What Is Pot Roast?
Pot Roast is a term that is used to describe a dish made of beef cooked by slow-cooking a typically tough piece of meat in humid temperatures. More robust cuts like chuck steak and bottom round, short ribs, and 7-bone roasts, are the most popular for this method. The cuts mentioned are American terms. Different types of butchering and terms are employed all over the Anglophone world as well as beyond. Although the hardness of the fibers makes them inedible for roasting in the oven, slow cooking can tenderize the meat, as the liquid exchanges its flavors with beef.
Browning the roast prior to adding liquid is a good step to enhance the flavor. Browning occurs at lower temperatures, with a longer cooking time but the outcome isn't as intensive as a sear at high temperatures. The two methods are both viable in the preparation of pot roast. The result is succulent, tender meat and a rich, thick liquid that can be a great addition to your gravy.
In the USA, it is often referred to by the name of "Yankee pot roast", it is typically served with vegetables, such as potatoes, carrots, and onions that are simmered within the liquid used to cook. It is an American recipe that draws inspiration from the French dish of boeuf a la mode and the German sauerbraten and Ashkenazi stews made of meat. The newer "Mississippi Pot Roast" is typically prepared with ranch-flavored seasoning powder, chuck, and pepperoncini.

- 1/2 cup cold water + 4 tablespoons corn starch, for thickening the gravy at the end
- 5 Tablespoons olive oil
- 3 Tablespoons flour
Meat Seasoning:
- 3/4 teaspoon black pepper
- 3 teaspoons brown sugar
- 1 1/2 teaspoon garlic powder
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon chili powder
- 1 1/2 teaspoon onion powder
- 1 1/2 teaspoon paprika
For Gravy:
- 3 cups Pacific Foods Organic Beef Broth, Recommended
- 1 1/2 cup chicken broth
- 2 teaspoon onion powder
- 1 1/2 cube Member's Mark Beef Bouillon, Recommended
- 1 1/2 teaspoon low sodium soy sauce, can sub Worcestershire
- 1 1/2 teaspoon garlic powder
- 1 1/2 Tablespoon cold unsalted butter
- Optional: 4 drops of Kitchen Bouquet browning and seasoning sauce for a darker hue
Sides:
- 3 lbs. whole carrots, cut into halves or thirds.
- 3 lbs. baby potatoes, see notes
Directions
Dry roast thoroughly. Mix seasoning ingredients together and rub it all over the roast. Then follow it with the flour.
The olive oil is heated in an oven-proof pan at medium-high temperature. When the oil has become clear and hot then add the roast and sear each side for about 2 minutes, or until a golden crust has formed. If necessary, lower the heat while cooking. Remove the pan from the heat and set it aside.
After mixing the gravy ingredients, pour the gravy into the slow cooker. The pot roast, as well as any juices, comes next.
Cut the potatoes into thirds or half of the same size. (If you have potatoes that are 1-2 inches are used, they can be left intact.)
Peel the carrots then cut them into thirds or halves. The carrots that are very thick can be cut in half lengthwise.
Place the potatoes in a row around the roast, and then top with carrots. Put the lid on top of the roast and resist the urge to let it open during cooking, as you'll lose heat.
Cook in the high setting for about 5-6 hours. Alternatively, cook on low for 8 to 10 hours.
Remove your carrots, potato, and roast, and place them on a platter for serving. Cover with foil.
Prepare the Gravy
Utilize oven gloves to lift the crock up and take the juices to an oven-safe saucepan, or if the crock can be used on stovetops, it is possible to place it directly on top of the stove.
Let the juices come to an easy boiling. Mix 4 tablespoons of corn starch with 4 tablespoons of cold water, and stir to combine. Add it gradually to the gravy, whisking constantly to mix it in.
Reduce the temperature to low and cook until it is ready to serve. The sauce will continue to get thicker. If you want a darker color, add a few drops of Kitchen Bouquet browning and seasoning sauce. Mix 1 1/2 tablespoons of chilled butter prior to serving.
Sprinkle the carrots and potatoes with the addition of salt and pepper as desired and serve!

Similar Golden Corral Yankee Pot Roast Recipe
Carrots, celery, and pearl onions are used in my Yankee pot roast recipe. However, you can use your favorite vegetables in place of them. Red wine, a popular ingredient in modern pot roasts, is also recommended for a richer flavor. If you don't want to use red wine, beef stock can be used instead. To get the best results, you can use a Dutch oven with a heavy bottom to cook the meat. Continue braising the meat in the oven after that. This ensures that the pot is evenly heated and prevents scorching the bottom. You can use any leftovers to make Pot Roast Grilled Cheese and Giant Pot Roast Ravioli.
Preparation Time: 15 Minutes Cook Time: 4 Hours Total Time: 4 Hours 15 Minutes

Ingredients
- 5-pound beef chuck roast
- 2 medium yellow onions, diced
- 5 tablespoons Pompeian Extra Virgin Olive Oil, Recommended
- 1 1/2 teaspoon chopped fresh rosemary
- 4 garlic cloves, minced
- 1 1/2 cup medium-bodied red wine
- 1 1/2 teaspoon chopped fresh thyme
- 3 tablespoons tomato paste
- 6 cups Kitchen Basics Original Beef Stock, recommended
- 4 celery ribs, cut into 2-inch pieces
- 4 large carrots, peeled and cut into 2-inch pieces
- 2 bay leaf, whole
- 3 cups pearl onions, ends removed and peeled
- 3 sprigs of fresh thyme
- 3 sprigs of fresh rosemary
- To taste, season with Kosher or sea salt and freshly ground black pepper.
Directions
Preheat the oven to 350°F and position a rack in the lowest third of the oven. Dry the meat, then sprinkle liberally all over by adding salt and pepper.
Place a medium-large Dutch Oven over high heat. Add 3 tablespoons of olive oil. Add the beef into the pot and cook evenly on all sides using tongs to rotate the roast around, approximately 5 minutes for each side. Remove the roast from the pan and set it aside on a platter.
Reduce the heat to low and drizzle in the olive oil. Add the garlic, onion, and chopped herbs while stirring frequently until the onions are translucent, around 6 minutes.
Deglaze The Pot
Pour in the wine along with 3 cups of beef stock, scraping the bits of browning off the base of the pan. Add the tomato paste, then return the roast that has been browned into the pan, adding additional stock to make it closer to the top of the roast (the quantity of stock you'll require will depend on how big the roast). Cook until it reaches a boil.
When it's simmering, take the saucepan from the stove. Cover the lid with aluminum foil after covering the top of the pot. Place the pot in the oven to cook until the meat is cooked through, about two to two and a half hours. Make sure that the liquid in the cooker is at a simmer but it's not boiling and there's enough liquid in the pot to keep the meat from drying out.
Take the pot out of the oven and place the bay leaf, vegetables, and herb sprigs on top of the meat. Cover the pot and return it into the oven to cook for another 20 to 30 minutes up to the point that vegetables become cooked and a knife is able to slide through the meat. Place the roast on a baking sheet to keep it warm. For 15 minutes, cover it with foil.
For serving, slice the meat against the grain or make use of two forks to cut the meat into pieces. Get rid of the bay leaves and herb sprigs, then place the vegetables and beef on a plate. Serve the meat and vegetables with the sauce. Serve with potato mash, eggs with butter, noodles, or rice.
